What is Calcium propionate?
Calcium propionate is the Calcium salt of Propionic acid. It is a colourless to white crystalline solid and well-soluble in water. The food grade is indicated by the E-number E 282.
Calcium propionate is mainly used in small quantities as a preservative in various foods (food grade), including bread and pastries. In this, the substance acts as a fungal inhibitor. Calcium propionate is also added to feed to extend the shelf life of the feed. In fermented products, for example, cheeses, a high concentration of calcium propionate is present.
